Burdock: The entire plant, except the burrs, is edible. Young leaves can be eaten raw but old leaves must be boiled in several changes of water for at least 30 minutes.


Clover: A versatile food as the leaves, flowers and seeds can be used as tea, boiled greens or flour. It is rich in protein.


Oyster plant, also known as salsify: The flowers show from dawn until midday when they close up. Roots can be dried as a food or dried and crushed as a coffee substitute.


Rock tripe Use it as a boiled vegetable or add it to soup or stew. All lichens must be soaked for minimum of six hours but rock tripe requires at least eight hours.
